Spicy Soup!
Kitchen adventures are interesting these days – Coriander decided to help with my favourite spicy soup…starting with an onion chopped fine and sizzled in oil…

…and then minced garlic and grated ginger (chef’s tip: store the ginger root in the freezer, it’s easy to grate it from frozen and will not spoil)…fry the ginger and garlic for just a minute, then…

…add a few delicious spices (you guessed it – including coriander seeds)…fry for another minute! Then add water or soup stock.

Add lentils and squash chopped into cubes about inch on all sides. We make this soup with butternut squash but you can use yams or sweet potatoes or other squash… simmer until the lentils and squash are cooked!

Then pour in some creamy coconut milk…

Last, chop up some handfuls of chard, spinach, kale or your other favourite green veg…

…and then taste the delicious autumn soup – mmmmm!

That sounds delicious! I do a spicy carrot and red lentil one at this time of year. Spicy soup is perfect for a miserable wet Autumn day.
I think I will try it with carrots some time – that sounds delicious too. It has definitely turned into soup and stew season here!

Your Spicy Soup sounds delicious! Last evening we had something similar except minus squash/sweet potato but like yours, very appropo for the season.
It’s one of my favourite soups…and I love that I can still nip out to the garden for a handfull of chard to add at the end!
Autumn soups are wonderful. This recipe looks worthy of a try here at my house. Love seeing the girls helping you concoct this culinary wonder!

Sounds like the curried pumpkin soup I make for the Husband to take to work, only I use cannellini beans instead of lentils, and add carrot and sweet potato. 😛
oh goodness, that sounds like a very delicious variation! Cannellini beans are like hen’s teeth around here, so I will probably stick to french lentils!

It certainly is a very satisfying and warming soup! You could probably freeze it too, adding the greens after re-warming and just before eating!
Making soup can be challenging when you are as tall as the ingredients but sounds like she did well! Now I am craving some Autumn soup!
H ha, yes, the Hittys mostly help by waving encouragingly and striking poses with the ingredients! But I like that kind of help! Definitely give this soup a try, you may decide you like it too.
