Coriander makes Soul Cakes
A mountain of Mixed Spice and flour (British Mixed Spice contains coriander don’t you know!)…

…along with a bowlful of butter and sugar…

…and a cup of currants…
.
.
…three yellow egg yolks…
.
.
…then finally a little milk if needed so it can be rolled, flattened and marked.

Happy All Soul’s Day…Coriander and I celebrated by making (and sharing!) some Soul Cakes!

Ah, another sweet day to celebrate. I always appreciate your bringing those days to our attention.
We like these sweet treats – they are reminiscent of Welsh cakes though they are baked in the oven and not on a griddle.
Amazed at the use of coriander powder !

Coriander here, Coriander there…we are finding it all over the kitchen these days. It’s a good thing I bought a huge jar of it last time I was at the shop!
There are lots of recipes with a little hidden coriander. I like it as a tiny undertone in a mixture, but not as a topnote. I have a cake recipe with 11 different spices in it, including black pepper… I must get it out and make it again, it’s delicious, if long-winded to make.
Oooh – 11 spice spice cake sounds delicious! Even the black pepper, which I like in pfeffernusse, but haven’t knowingly had in a cake!
I shall email you the recipe. Each spice has its own place in the flavour profile, but can be reduced to a more common assortment for those with a more sensible spice collection than mine!
My spice shelf is completely insensible! Coriander and I shall love making this cake!

We love them – let us know what you think if you do make some. As I said to Josefina above, they remind me of Welsh cakes – perhaps you are in a better place to comment on that!
I am eating one with a coffee as I type. they are lovely! And yes, althought he recipe and method are quite different they are very like Welsh cakes.

I suspect it smells very nice and looks quite cosy and inviting at your home with all the dolls about!
They do evoke cosy and comfortable…we can always find ways to make them happy, they love to help with crafty projects and baking!

Tell Mrs Sag that I have it on good authority (see above for comment by “Going Batty in Wales”) that they are very like Welsh cakes, only baked in an oven instead of on a griddle…they didn’t last long here – maybe suggest that she double the recipe!
