Coriander and Orange Cake

Brined Oranges

Three weeks ago Coriander helped me to brine some oranges and today they were ready to make into cake…

toasted

…along with some coriander seeds.  The oranges were thoroughly rinsed, drained, then processed into paste. The coriander seeds were toasted and then ground into powder.

dry

The coriander powder went into the dry ingredients bowl along with baking powder, white flour, brown flour and cornmeal…

.

unmixed

…the orange paste went into the wet ingredients bowl, along with yoghurt, honey, eggs, olive oil, and vanilla extract!

Cake!

The brined orange paste was very alarmingly salty (of course it was!), but we went ahead and assembled the cake as writ. The crumbs we gleaned after the cakes came out of the oven suggested that it wasn’t too salty once everything was mixed together.

Yummy!

Hitty Coriander said this cake was completely delicious, and though you might think she could be prejudiced because of her name…

Optional Whipping cream

…especially with the “optional” whipping cream on top!

    • It did look strange, but it tasted delicious! We were surprised at how not-salty it was, and how orange-y. The coriander seeds tasted quite different too, they were toasted before being ground up, and didn’t taste in the least like curry!

  3. I wouldn’t mind a salty cake at all, but I’m glad the cake came out tasting sweet enough for dolls and humans alike. That final, candlelit photo is a treasure.
