Today is The day to celebrate Finland’s National Poet – Johan Ludvig Runeberg…

…and because he liked a sweet cake for breakfast, his wife Frederika invented this special treat! It’s a little cardamom cake that has a well filled with raspberry jam, and a little circle of icing around the jam – yum!

These little cakes appear in Finnish bakeries around this time of year – we don’t have the proper cylinder-shaped pan so have to make do with muffin pans! We thought that it would adapt well to a gluten free version since a good proportion of the flour in the recipe is almond flour.

It was tasty! This gluten free version was a good as any other we have tried…but we must track down one of those cylindrical pans to make them look even better!
