Springerle
For about five years (ever since the Quimper Hitty human inherited a couple of Springerle rolling pins), every December we decide to make these special European Christmas cookies. We locate the recipe, assemble the ingredients, and read the instructions….then we get to the part that says the baked cookies have to sit for 6 – 8 weeks before eating. Drat. This year, Hattie, one of my favourite baking companions, piped up the last week of October.
For once, we are in time to make them! The recipe was located, the ingredients and equipment acquired and assembled, and the cookies made.

Unfortunately it was too sticky for photos to be taken during the process…but here you can see Hattie placing the cookies onto the cookie sheet. The dough has been mixed, rolled out with a plain rolling pin, re-rolled with the springerle rolling pin, separated with the pastry wheel, and placed on the cooky sheet which was lightly oiled and sprinkled with Anise seeds…

…it turns out that now they have to dry out for 8 – 24 hours to before baking. Hattie was very committed to seeing this baking project through, and here she is counting up the unbaked cookies (there are exactly 100).

You bet your sweet life!!! These scrumptious cookies need protection against thieves!!! Go Hattie, go…as for myself, I am wondering if there’s a job opening for cookie taster in the cupboard!
If I could get them away from Hattie and send some, but you would have to keep them until Christmas before tasting!
I believe Hattie is correct in thinking there could be cookie thieves. Thank goodness she’s the one in charge.
There are certain of my Hittys who don’t consider cooky-removal as being thievery, but Hattie is keeping a gimlet eye on the cookies and has her broom ready for swatting!

If there is a way to reduce those cookies from 100 to 98…the block twins will find it.
Heh heh heh…those twins do often have mysterious crumbs on their pinafores….

I am sure they will disappear as soon as they figure out how to liberate a Springerle or two…
Hattie and her broom look very determined, hope the block twins get the message.
I am not so sure…but Hattie is determined no-one will get a taste until the cookies are at their very best – even the favourite photographer has had his fingers swatted!
