Othello Cake
Constance has donned her apron and is helping in the kitchen again. We have always wanted to try this recipe, and a perfect opportunity is coming up…it is a complicated cake so we are starting today by: Beating three eggs and one cup of sugar in a large bowl. Next, mixing 1 1/3 cups cake flour, 2 tsp baking powder in a small bowl, and adding it and 1/4 cup milk to the egg mixture. Then stirring in 2 tablespoons melted butter, 2 tablespoons lemon juice and 1 tablespoon grated lemon rind. The batter is poured into two 9-inch cake pans and baked for about 12 – 15 minutes at 350 degrees f.
The cake layers look good!

When the cake was assembled and eaten, we could actually taste this lemony layer, even though there were almond and chocolate layers too. Really an amazing and delicious combination.
