Berry Cream
Constance tried out my favourite berry recipe, using the results of the recent blackberrying expedition!
She and Min gave it the necessary taste test!

We make Berry Cream with two cups of water, half a cup of sugar, and use potato starch, and whatever berries are around at the time. We eat it usually for breakfast with yoghurt and muesli, but it is delicious on top of ice cream!
The recipe can be found in the red cloth cover cookbook from 1946 called Swedish Food. My mother took a copy of the book with her when she emigrated to Argentina in the 1950’s. The book came with us to Canada, and was one of those cookbooks with pages either falling out, or stuck together, but it contains many recipes that we can’t do without! Luckily we found a second-hand copy, easier to read and just as essential to the Quimper Hitty human’s kitchen!

aha..this is similar to a recipe in the Mennonite cookbook…More With Less. have served it with pancakes!.

I have “More With Less – it falls open at the page for apple crisp! I didn’t know the berry sauce recipe was in there! Oh yes – pancakes are a very acceptable substrate for this substance!
The girls are always willing to help with picking and cooking. I think they have more energy than me!
