Tarragon Vinegar
On a beautiful May morning, Perdita collected her apron and basket…

…went out to the garden…

…and collected some tarragon fronds.

.
Back in the cupboard she filled a jar with the leaves…

.
…topped up the jar with vinegar…
.
.
…put on the lid…
.
.
…and popped it into the pantry where it will stay dark and cool for a couple of months before we use it!
Herbed vinegar is really that easy – no need for any fancy equipment or ingredients! Try it with fresh rosemary, oregano, sage or lavender!

Thank you for the idea! I have never tried this with vinegar, I sometimes make herb-olive oil, but perhaps I should try this 🙂
Taragon Vinegar in particular makes a refreshing salad dressing, but this year I am going to try making a cleaning solution with lavender and cheaper vinegar.

What a good idea! I usually have fruit vinegars in the pantry but not herb ones.
I am going to try making lavender Vinegar for a cleaning solution, using cheap white vinegar. I use white wine vinegar for the comestibles.
I use white vinegar for cleaning and sometimes infuse it with lemon or orange skins. lavender doesn’t grow for me – I think it is too wet here.
I bet that vinegar will be delicious!
I think it will be! Refreshing and tart – perfect to sprinkle over summer salads!
