      • I have a stick blender, but I peel, then hack the quince into chunks, dropping into acidulated water, then in a pan to bring up to simmer, then covered in the oven for a couple of hours til that fab pink arrives and I know it’s soft. It’s soft enough then to mash with a potato masher, but I blend for ease, and then dehydrated. No need for additional sugar, which makes me v happy, and I try and do this on sunny days when the photovoltaics are generating!

      • That sounds like a great way to process quince, and less sugar is good too! We don’t have much in the way of photovoltaics at this time of year, alas. But fortunately there are other methods of generating heat!
