Welsh Cakes
Another thoughtful Hitty friend, Hitty Madge has sent Constance a Postcard!…..
Madge knew that while it was wonderful to get a postcard, and the picture was very lovely, it was the Recipe that tickled our inspiration…Constance decreed it must be tried at once!

…making a few substitutions according to what was in our store cupboard at the time, but pretty much sticking to the recipe…

Constance, hearkening back to the Original Hitty’s book felt no qualms about using nutmeg instead of mixed spice!

The Human used a biscuit-cutter but Constance found a bottle top to be the right size for her griddle.

Two minutes a side on medium heat…

.
…resulted in many lovely cakes…
.
.
…and a lovely Welsh Cake treat to have with afternoon tea.!!

We are very impressed about your ingenuity, Constance. How very sensible of you to use a bottle top as a cutter. We love Welsh cakes but alwayshave to slice up a big person one and use it as a large cake – not ideal as they should really be eaten fresh off the griddle, still warm. Our Mamgu (grandma) likes hers with butter.

We have such thoughtful Hitty friends! The little Welsh Cakes have been scarfed by hungry little people, but the big ones are lovely and fresh!
