Green Soup from the April Garden
A glorious April day and Henrietta went the garden with her collecting basket – picking sorrel…

…nettles from the neighbour…
.
.
…and Good King Henry!

.
She got a big basketful (as did I)…
.
.
…we picked the nettles with gloves on, and steamed them to get rid of the sting!

Then chopped all the greens with a big knife…
.
.
…and a small one…
.
.
…and an onion, a carrot and two potatoes…
.
.
…and made it all into spring green soup! Oh how delicious it was – I just loved having soup from the first bright greens from our spring garden!

That does sound delicious! I harvested the first chive in my garden today, it was also very yummy on top of my lunch.
I can harvest some chives today too!
I bet it tasted fantastic and like Spring! Henrietta was was working hard!
She is very glad to help, as she gets the first taste of the result!

Yum! I’ve never known anyone else who makes sorrel soup. I’ve not tried it with nettle before. I don’t think we have Good King Henry here. Looks delicious!
I think any spring green…I have made it with parsley and chard instead of nettles and GKH. Whatever you have in the garden, plus a potato to thicken it!

It makes delicious soup, and has a bite if you add it to salad. I love it because it is one of the first greens in the garden that gets big enough to harvest!

I have yet to make it this year but I love using wild garlic leaves and nettles in a similar recipe.
